By the time guns started to become the main armament on the
battlefield, mail had long stopped being the primary form of armor, at
least amongst wealthier knights and men at arms. But a good plate
harness or later cuirasses/breastplates could stop a ball fired from a
muzzle loading pistol.

Guns didn't become popular because they could defeat armor, an
English/Welsh longbow can go through mail as easily as early guns
could. They became popular because it was cheaper and easier to arm
than it was to equip your forces with longbows and/or crossbows. It
was easier to train someone to use a gun than it was to train someone
to use a longbow which took years of constant training to be able to
draw a heavy warbow.
